DoggyPuppinInu...yes, I agree, though I don't think it will be problematic to have tight lids here: the vinegar addition slows fermentation, and most of the salt and fermenting? yeast have been poured off. My producers were concerned about the sanitariness of the product, so I went along. Thanks! @johnlapuma

tight fitting jar for holding newly made Kimchi. You must be kidding. The gas generated from the fermentation process needed? to be escape. The jar should be leaky during the ferment process. After the fermentation, it should be stored in a tight jar and refrigerated.
